CATDOLL: Why is seaweed purple-red?

1. Why is laver purple-red?

Fresh laver is dark green, and after drying it will appear purple brown or purple red. It is normal for laver to become lighter in color and turn into light purple, indicating that there is a loss of nutrients. As long as it is not spoiled, it will not affect consumption.

Laver is one of the leading varieties in my country's marine agriculture and export. The crude protein content of dried laver is 30-50%, rich in dietary fiber, multiple vitamins, and trace elements such as calcium, potassium, and magnesium. It also contains algae-specific phycobiliprotein, which has high nutritional value.

Porphyra polysaccharide belongs to galactan sulfate, which is a very important substance in the composition of organisms. Recent studies have shown that Porphyra polysaccharide has a variety of biological activities. Porphyra yezoensis polysaccharide has the effects of enhancing immune function, anti-aging, anti-coagulation, lowering blood lipids, and inhibiting thrombosis.

As of 2018, China has approved 6 improved varieties of laver, including 4 varieties of laver and 2 varieties of laver. Among the laver varieties, Shenfu No. 1, Shenfu No. 2 and Minfeng No. 1 have the advantages of high quality, high yield and strong resistance to high temperatures.

The color of laver varies depending on the environment and time. It turns purple after drying, hence the name laver. If the laver is harvested in autumn, after being stored in the high temperature of summer, the internal pigment changes. It is normal for the purple pigment to slowly dissolve in water after soaking in water, especially for a long time. As long as the color loss is not too serious, there is no problem. No pigment is generally not added to laver. Laver is relatively cheap. Adding pigment will increase the cost, which is not profitable for merchants.
