Most types of groupers belong to marine fish. This is the general name for the fish species of the subfamily Epinephelinae in the order Perciformes, including many species. Among them, the more common ones are the spotted grouper, the blue grouper, the oblique-banded grouper, etc. They mostly live in tropical and temperate oceans in waters with rocky reefs or corals, and like to hide in gaps between reefs or caves.

In summer, they are distributed at water levels of 10 to 30 meters. In midsummer, they also occur at water levels of 2 to 3 meters. In autumn and winter, when the water temperature drops, they swim to deeper waters of 40 to 80 meters. The suitable temperature range is 15 to 34 degrees Celsius, the suitable water temperature is 22 to 28 degrees Celsius, and the suitable salt range is wide. They can survive in waters with salinity above 10‰. However, there is also a kind of grouper that can grow in light water. It is the freshwater grouper, which is distributed in Taiwan, Guangdong, Guangxi and other regions in China.

Freshwater grouper is a tropical fish species that grows in thin water and can also grow in seawater with a salinity of less than 1%. Its suitable temperature range is around 30 degrees. When the water temperature drops to 20 degrees, its food intake decreases significantly. When the water temperature drops to 15 degrees, its body becomes unbalanced. Therefore, areas where the water level drops below 15 degrees in winter are not suitable for the growth of freshwater grouper.

What does grouper look like?

The body characteristics of grouper are exactly the same. They are generally long in body, flattened laterally, brightly colored, with many variations. They are often brown or red, with patterns and spots, large mouths, thin and pointed teeth, some of which are expanded into canine teeth, and very developed spines on the dorsal and anal fins. There are red-spotted grouper and cloud-patterned grouper. The blue grouper is also called blue spot because its body color is bluish-brown. It is the type with the largest production in Fujian.

The body of grouper is oval, flattened laterally, with a short and blunt snout, a large mouth, a well-developed flattened bone, fine ctenoid scales, a strong dorsal fin, and the body color of the fish can change with the environment. The length of an adult fish is generally 20 to 30 cm.

How to cook grouper in tomato sauce

Food: grouper, tomato sauce, ginger, garlic, shallot, coriander, rice wine, salt, seasoning, cooking oil, sugar, chili. Method: clean the grouper, cut the fish into pieces, marinate with salt for a while, slice the garlic and ginger, wash the shallot, shallot and chili, and stir-fry the lamb liver; add ginger and grouper to a hot pan with cold oil, and fry until one side becomes hard and yellow.

Turn over and continue frying until both sides are golden brown. Remove from heat. Leave some oil in the pan, add chili ginger slices, scallions and garlic slices to fry until fragrant, then pour in tomato sauce and stir-fry. Add appropriate amount of water, add fish, add a small amount of rice wine, seasonings of salt and sugar; simmer for about 10 minutes until the fish is flavored, then turn to high heat to collect the sauce and serve. Sprinkle coriander on the plate.
