CATDOLL: Why are some sea urchins bitter? How do you tell the difference between male and female?

Why are horse dung sea urchins bitter? How to tell the difference between male and female?

The female sea urchin tastes bitter, while the male one is sweet. Some people say that it is because of the water quality in Qingdao, and that if it is too sweet, it will taste bitter.

As for how to distinguish between male and female, it is very simple. The yellow ones are female, and the relatively white ones are male. In the photo, the upper right corner is all female, the lower right corner is all male, and the upper left corner has both male and female.

sea urchin

Sea urchins, Echinoidea, are the general name for the class Echinoidea of the phylum Echinodermata. They are divided into 2 subclasses and 22 orders. There are about 5,000 fossil species. There are 800 living species belonging to 225 genera. About 100 species are known in China. Sea urchins are the earliest model organisms used in the history of biological sciences. Their eggs and embryos have played a pivotal role in the development of early developmental biology. As early as 1875, Oscer Hertiwig (1849-1922) began to use sea urchins as materials to study the role of the nucleus in the fertilization process. In 1891, Hans Driesh (1876-1941) divided the sea urchin embryo that had just completed the first cleavage into two under a microscope, and found that the two separated cells each formed a complete larva. The significance of this experiment is to prove that the embryo has the ability to adjust its development, which laid the first conceptual milestone for modern developmental biology.

The body is spherical, hemispherical, heart-shaped or disc-shaped. The internal organs are contained in a shell composed of many calcareous bone plates tightly fused together. The shell is covered with many movable spines. Each pair of tube feet holes on the shell plate is equivalent to a tube foot, and there are 10 vertical rows in multiple rows. The mouth is at the bottom, with 5 white teeth in the center, which are part of the chewing organ - the lantern of Assyria. A sea urchin shell is made up of about 3,000 small plates fused together.

Assassin in the Ocean

Sea urchins, also known as thorny pots and sea hedgehogs, are spherical in shape, like purple cacti with thorns, so they are nicknamed "sea assassins". Fishermen often call them "undersea tree balls" and "Dragon Palace hedgehogs". There are about 850 species of sea urchins in the world, and about 150 species are found along the coast of my country. Common ones include horse dung sea urchins, Dalian purple sea urchins, heart-shaped sea urchins, and carved rib sea urchins.

Sea urchins are an ancient creature in the ocean, and are close relatives of starfish and sea cucumbers. According to scientific research, they have a history of survival on Earth for hundreds of millions of years. Due to the vicissitudes of life, fossils of sea urchins have been found in the Tibetan Plateau of my country. They have lived in all major oceans in the world, with the most frequent activities in the Indian Ocean and the Pacific Ocean. Because they like high-salinity waters, they are rarely distributed near the mouth of rivers and in low-salinity seawater, or not at all.

Sea urchin's defense tool

Sea urchins like to live in reef forests or rock crevices below the intertidal zone rich in seaweed, as well as in shallow sea areas with hard muddy sand, hiding in rock crevices, between rocks, in muddy sand or coral reefs. They have the habit of hiding from the light and coming out at night, and rely on spines to defend against enemies.

The spines of sea urchins can be long or short, pointed or blunt, and the structure of the spines varies from species to species. A type of sea urchin, shaped like a blooming flower, is abundant in the coral reefs of Hainan Island. It is commonly known as a cigarette holder because its spines are very thick and can be used as cigarette holders. Some species have very long spines, which can reach more than 20 centimeters.

Reproductive infection of sea urchins

Sea urchins are dioecious, and females can carry eggs all year round, ovulating several times a year. Sea urchins reach maturity after growing for three years and begin to fulfill the important task of reproducing offspring. They are social animals, and they have a strange phenomenon in reproduction. In a local sea area, once a sea urchin releases reproductive cells, whether sperm or eggs, into the water, it will broadcast the information to every sea urchin nearby, stimulating all sexually mature sea urchins in the area to release sperm or ovulate. This strange phenomenon is described as a "reproductive infectious disease."

Sea urchins are full of treasures

Sea urchin roe is not only delicious, but also has high nutritional value. Every 100 grams of fresh sea urchin roe contains 41 grams of protein, 32.7 grams of fat, vitamin A, D, various amino acids, phosphorus, iron, calcium and other nutrients. Sea urchin can also be processed into salted sea urchin, alcohol sea urchin, iced sea urchin, sea urchin sauce and steamed sea urchin canned food. There are many ways to eat sea urchin. Whether it is fresh sea urchin roe (roe) or any processed series of varieties, it can be used for steaming, frying, cold dishes or cooking into soup. For example, frying sea urchin roe with meat, asparagus and eggs will become a delicious and superior dish; and using sea urchin roe soup to soak noodles, without adding any seasoning, its taste is more delicious than chicken noodle soup. If sea urchin roe is used in hot pot, the flavor is even more unique. More high-end ways of eating include sea urchin stewed with abalone and sea urchin stewed with snow clam and many other precious dishes. In Guangzhou and Xiamen restaurants, most sea urchins are steamed. The method of making it is: first use a saw to cut a cut in the top of the sea urchin shell, then inject a proper amount of egg paste into the cut, mix it with the sea urchin roe in the shell, and steam it whole. This is an authentic way of eating, suitable for all ages.

Sea urchins also have a wide range of medicinal functions. Its medicinal part is the entire shell, which is calcareous, and the name of the medicinal material is "sea urchin". Sea urchin is not only a high-quality seafood delicacy, but also a valuable Chinese medicinal material. There are records of sea urchins being used as medicine in my country for a long time. The "Original Materia Medica" records that sea urchins have the effect of "curing heartache". Modern Chinese medicine believes that "sea urchins are salty and flat in nature, and have the functions of softening and dispersing nodules, resolving phlegm and reducing swelling." The shell, thorns, and yolk of sea urchins can treat gastric and duodenal ulcers, otitis media, etc. At the same time, sea urchin shells can also be made into handicrafts. Some manufacturers also develop sea urchin foods, making sea urchins into iced sea urchins, alcohol sea urchins, and sea urchin sauce.

However, not all sea urchins are edible, and many species are poisonous. These sea urchins look much prettier than non-toxic ones. For example, the thorn-ringed sea urchins that grow among the coral reefs of the South China Sea have black and white stripes on their thick spines and yellow thin spines. The spines of young thorn-ringed sea urchins have white and green ribbons that sparkle, and a barb grows at the tip of the thin spines. Once it penetrates the skin, the venom will be injected into the human body, and the thin spines will break off in the flesh, causing local redness, swelling and pain on the skin. Some even have symptoms of poisoning such as rapid heartbeat and whole-body spasms.

Spiny porpoise

The porcupine is a fish that lives at the bottom of the ocean. It doesn't like swimming. If it weren't for its hard spines, it would have been eliminated by the ruthless nature. How can the porcupine expand its hard spines? It turns out that the porcupine's body structure is very special. Under its intestines, there is an air cusp that expands backwards into a strip. Once the porcupine encounters a natural enemy, it immediately rushes to the surface of the water, opens its mouth to inhale air, and fills the air cusp with gas. Or it opens its small mouth to inhale a large amount of seawater. Because the skin on the abdomen of the porcupine is looser than the skin on the back, and the air cusp is located in the front and lower part of the intestines. Therefore, the porcupine's head and abdomen are very large, which allows it to float in the water. Natural enemies have no way to deal with it. Because from any direction, the mouth will inevitably be pierced by the porcupine's hard spines. Therefore, its natural enemies have to give up this thorny delicacy. After the danger is over, the porcupine has to use great strength to expel air or seawater from its gills and mouth to restore its body to normal. Although the porcupine is a weakling in the ocean, it can still survive. Even the sharks in the ocean can't do anything to it. Once, a diver saw a ferocious shark with a big mouth full of sharp teeth rushing towards a small porcupine. The porcupine suddenly spread out its hard spines, just like a cactus covered with thorns. The vicious shark bit the small porcupine. In an instant, the shark's mouth was full of blood and had to spit out the porcupine. The exasperated shark circled around the small porcupine, but could not catch it, so he had to go back disappointed. When the danger was over, the small porcupine returned to its usual state and went home leisurely.
