Climate, soil, and methods all have their own characteristics. You cannot simply copy other people's experiences. You can plant them like you plant flowers. You can always find the right method.

There are many varieties of Chinese cabbage. What are the good ones?

For example, many people do not remove the flowers of red cabbage moss, and some people even leave the tender leaves on the moss, but professional restaurants will remove all the flowers and leaves, because the flowers are a bit astringent when fried, which affects the taste, and the leaves are not beautiful when fried. If you want to make the fried red cabbage moss more delicious, it is recommended to fry it with lard or pork belly, which not only makes the color brighter, but also makes it softer and sweeter.

Every year when I go home, my mother-in-law grows red cabbage and white cabbage. When I bought red cabbage from the market, I thought the flowers on it were edible. Later, my husband told my mother-in-law that it would be very bitter if the flowers were not removed. The flowers of red cabbage are generally not big. When the flowers are in full bloom, no one eats them. Vegetables have their own seasons. They are not delicious after the season. I never pick them when I stir-fry them. I think the flower buds and pollen should be edible.

Red cabbage moss, also known as Brassica juncea, is rich in vitamins and nutrients. My family grows a lot of it. I pick a lot of it and bring it back to Chongqing to eat. Red cabbage moss contains more vitamin C than white cabbage moss. Whether it is plant nutrition or cooking food theory, these professional scientific knowledge are not like this. Instead, they prove that what is removed is the essence. The leaves that are not needed for stir-frying celery are the essence of celery, and the flowers that are removed from red cabbage moss are also the essence.

Red cabbage stalks are also found in Shiyan, Hubei, but we generally call them "purple cabbage stalks" because they turn purple when they are red. Red cabbage stalks taste crisp and delicious, whether they are stir-fried or paired with other meat dishes. Red cabbage stalks mainly grow in the Yangtze River Basin. According to what I saw on the Internet, the varieties grown in Wuchang, Hubei and Chengdu, Sichuan are the most delicious. Red cabbage stalks are purple-red in color and have golden flowers. They were famous vegetables in the Tang Dynasty. Before the Spring Festival every year, after the beginning of winter, cabbage stalks are gradually put on the market. In my eyes as a Hubei native, cabbage stalks are delicious dishes on the Spring Festival table. Every Spring Festival, when there are guests coming and going at home, in addition to preparing pork ribs and lotus root soup and various meat dishes to entertain everyone,
