Antarctic cod lives in the colder waters of the Southern Ocean, and is even found near the Ross Ice Shelf at 82° south latitude. It is about 40 centimeters long and weighs several kilograms. It is short and thick, silver-gray with slightly dark brown spots, has a large head, a round mouth, thick lips, and grayish-white blood without hemoglobin. Its unique physiological function is to resist low temperatures, so in addition to being commercially developed as an important resource, Antarctic cod is also highly valued for its antifreeze function.

Research results on fish physiology show that most fish freeze into "popsicles" at -1°C. However, Antarctic cod can live actively at -1.87°C and swim around as if nothing has happened. It turns out that there is a special biochemical substance in the blood of Antarctic cod, called antifreeze protein, which is responsible for the effect.

Antifreeze proteins have an antifreeze effect because their molecules have an extended nature, as if there is a surface area in their structure that is very easy to interact with water or ice, thereby lowering the freezing point of water and preventing the freezing of body fluids. Therefore, antifreeze proteins give Antarctic cod an amazing ability to resist low temperatures.
