CATDOLL: What are the main differences between silver carp and bighead carp?

1. Different families

Silver carp is also called fathead fish, bighead fish, and black carp. It looks like silver carp. It has a flat body and a large and wide head, which is about 1/3 of its body length. Its mouth is also wide and slightly upturned. Its eyes are low. Its gill openings are large and its gill cover membrane is well developed.

Silver carp, also known as silver carp, water carp, jumping silver carp, and silver carp, belongs to the order Cypriniformes, family Cyprinidae, and is one of the four famous carps. Silver carp is a typical filter-feeding fish, which mainly feeds on zooplankton in the fry stage, and gradually turns to phytoplankton when it is more than 1.5 cm long.

2. Different living habits

Silver carp is impatient and good at jumping. It lives in the middle and upper layers of the water body. It is a typical filter-feeding fish. In the fry stage, it mainly eats zooplankton such as rotifers, cladocerans, copepods, etc. When it grows to more than 1.5 cm, it gradually turns to eating phytoplankton, and also eats soy milk, bean dregs powder and rice bran. It prefers to eat artificial micro-granular compound feed.

Silver carp is lively, likes to jump, and has the habit of swimming upstream, but its movements are not very agile and it is rather clumsy. Silver carp likes fertile water, and similar individuals often gather in groups and swim to the middle and upper layers of the water, especially in clear water areas with fertile water.

3. Different distribution

Silver carp has a wide distribution range and is found in all regions of my country. It is the most widely distributed freshwater fish in my country and mainly lives in the surface layer of the water.

Silver carp is suitable for breeding in fertile water. The length of the intestine is about 6-10 times the body length. It is one of the main freshwater farmed fish in my country. It is distributed in major water systems across the country.

Silver carp is sweet, mild, non-toxic, tender and nutritious, making it one of the best fish species to breed. Silver carp is a large freshwater fish that is raised artificially. It grows fast, has few diseases and has a high yield. Do you know the main difference between silver carp and bighead carp? How to make them delicious? Who can't eat them?

1. What are the main differences between silver carp and bighead carp?

1. From the perspective of living environment, silver carp lives in the upper layer of water and feeds on phytoplankton such as diatoms and green algae. Bighead carp lives in the middle and upper layers of water and feeds on zooplankton such as water fleas.

2. Judging from the size of the fish head, both silver carp and bighead carp have large heads, but the silver carp's head is even bigger, accounting for 1/2 or even more of the body, so silver carp is also called "big-head fish" or "fat-head fish".

3. Judging from the color of the fish scales, silver carp has light black spots on its body, while bighead carp has all white scales without black spots, which makes it easier to distinguish.

4. In terms of meat quality, silver carp has delicate meat and its fish head is rich in gelatin, which is most suitable for making chopped pepper fish head, garlic fish head, curry fish lips, fish head tofu soup, etc. Silver carp has slightly loose meat and is not as delicious as silver carp. Silver carp has more small bones and is not easy to eat. Silver carp is better.

5. From the perspective of fishing methods, silver carp is fished at a depth of 40 cm, and bighead carp is fished at a depth of 60 cm. Silver carp is fished with acid bait, and bighead carp is fished with smelly bait. Because they both live in the upper water layer, the fishing method for silver carp and bighead carp is floating fishing. The difference between them is that the distance of the fish hook from the water surface is a little different.

Price difference:

1. Silver carp: also known as silver carp, bighead carp, one of the four major carps. The price is relatively cheap, usually 2-3 yuan.

2. Silver carp: Also known as bighead carp, bighead carp, one of the four major carps. The price is generally more expensive than silver carp, usually 4-5 yuan.

Appearance distinction:

1. Look at the body color

Silver carp has no black spots above and below its lateral line, but bighead carp has black spots. The body color difference is relatively obvious, but it can only distinguish between silver carp and bighead carp when they are alive. If they have died for a few days or have been cooked, it is not easy to distinguish them. At this time, you need to use the following method to distinguish them.

2. Look at the abdomen

Silver carp cannot be distinguished from their body color, but bighead carp can be distinguished from silver carp by looking at their abdomen. Silver carp has an ridged abdomen, that is, there is a very obvious fold in the center of the abdomen, while bighead carp has a smooth abdomen without folds. This method of distinction is very practical and can further identify silver carp and bighead carp.

3. Look at the proportion

If the fish is cooked and served on the table, the ratio of the head to the body should be considered. Silver carp has a small head and a large body, while bighead carp has a large head and a small body. Specifically, the body of silver carp (from the gill cover to the base of the tail fin) is about 3 times the size of the head, while the body of bighead carp is 1 to 2 times the size of the head. The difference is obvious and it is easy to distinguish them after cooking.

2. How to cook silver carp

Braised silver carp

Material:

Silver carp, onion, ginger, garlic, dried pepper, star anise, noodle sauce, cooking wine, salt, sugar, coriander

practice:

1. Clean the fish and cut into pieces.

2. Wipe dry the water on the fish.

3. Pour cold oil into a hot pan. When the oil is hot, add the fish pieces and fry over low heat.

4. Fry both sides until golden brown and then take out.

5. Stir-fry scallions, ginger, garlic, dried peppers and star anise until fragrant, pour in cooking wine and add the fried fish pieces into the pan.

6. Add boiling water to cover half of the fish body, add Sihai noodle sauce and simmer over medium heat.

7. Turn over once in the middle, add appropriate amount of salt and sugar and continue stewing.

8. When the soup is almost dry, add MSG, chopped green onion and coriander and serve.

Tips:

1. When frying fish, be sure to wait until the oil is hot before putting the fish in. Do not rush to turn the fish over. Wait until the aroma comes out and the edges turn yellow before turning the fish over, otherwise it will easily stick to the pan.

2. Be sure to add boiling water when stewing, otherwise the fish meat will become tight and have a strong fishy smell, affecting the taste and flavor.

3. Because the fish is fried on both sides, you don’t need to add too much water.

Garlic Silver Carp

Material:

Live fish, salt, wine, cornstarch, garlic, green pepper, ginger, onion, chicken soup, rock sugar, wine, pepper, soy sauce, vinegar, dark soy sauce

practice:

I bought a tail and cut it into sections. After washing it, I used salt and wine to marinate it for 20 minutes. I washed it, drained it, wiped it dry, sprinkled it with a thin layer of cornstarch, and fried it in a pan on both sides. I took it out and put a bowl of garlic in the pan. Fry it until it turns yellow, but not burnt. Then I put the fish pieces, fresh and spicy red and green peppers, ginger slices, scallions, chicken soup, rock sugar, wine, pepper, covered it, and cooked it until it was seasoned. Then I added soy sauce and vinegar, and cooked it for a few more minutes. I added a few drops of dark soy sauce to adjust the color. It was done. I put the fish pieces on a plate, thickened the sauce with a thin starch, poured it on the fish, and sprinkled it with chopped green onions.

3. Who should not eat silver carp?

Although silver carp is rich in nutrients, it is not suitable for many patients to eat it. For example, patients with colds and fevers, scabies, swellings and pus, itchy skin diseases, red and swollen eyes, oral ulcers, constipation, lupus erythematosus and other diseases should not eat silver carp.

Patients with hyperthyroidism should not eat silver carp because it can increase inflammation.
