CATDOLL: How to clean clams? How to clean clams?

1. Warm water: The first step after getting home from the clams bought from the supermarket is to put them in water. We need to prepare warm water of about 50 degrees to soak them. Too high a temperature will scald the clams to death, and too low a temperature will not speed up the clams' breathing and will not help them spit out sand. After a while, the clams will start to spit out sand.

2. Salt + cooking oil; If you are in a hurry and want the clams to spit out the sand quickly, you can add a small amount of salt and cooking oil to warm water. Salt can stimulate the stomach and intestines of the clams and promote the spitting out of sand. Sea salt is even better. Cooking oil and water are not miscible and have a relatively small density, so they will float on the water. This will speed up the clams' breathing and spit out the sand faster.

3. Shake; if you want to eat it right after you buy it, you can also put the clams in a bowl, stir them in one direction with chopsticks, then cover it with a lid, shake it up and down vigorously for ten minutes, open the lid and take a look, there is already a lot of mud and sand inside, then wash it several times with clean water and you can start frying directly

4. Blanching; Another simple method is to blanch the clams. Wash the purchased clams, then put them in a pot, add cold water to the pot, start to boil the water on medium heat, and turn off the heat directly after the Lulian clams open. Blanching for too long will make the meat become old, and the clams will spit out the sand very quickly, but it will affect the freshness of the clams, and the taste will not be as strong as that of stir-fried ones, so this depends on the individual, but it saves time.
