1. How to cook braised frog with soybean sauce?

Ingredients:

Main ingredients: 600 grams of toad
Seasoning: 15g shallot, 10g ginger, 15g coriander, 30g lard (refined), 40g yellow sauce, 5g sugar, 10g vinegar, 15g cooking wine, 5g pepper, 3g star anise, 2g MSG, 10g sesame oil, 15g starch (corn)

Steps for making stewed frog:

1. First, knock each living forest frog unconscious, remove the internal organs from its mouth, peel off the skin, chop off the claws, then tie them up with string and wash them.
2. Add chicken soup into a spoon, add pepper, star anise, scallion and ginger slices, bring to a boil and cook for 5 minutes. Add the bound forest frogs and cook over low heat for 15 minutes. Remove from the pot and place in a round shape on a plate with the head facing outwards and the belly facing up.
3. Heat the cooked lard in a spoon, add the soybean paste and stir-fry, add vinegar, sugar and MSG, then push the frog into the spoon and simmer over low heat.
4. Simmer for about 15 minutes. When 1/5 of the soup is left, thicken it with starch, stir in a large spoon, add sesame oil and place it on a plate. Put a handful of coriander in the middle.

2. How to cook frog stewed with potatoes

Ingredients: 9 forest frogs (about one pound), 3 small potatoes, Northeastern yellow sauce, soy sauce, dark soy sauce, salt, green onions, and ginger.

1. Clean the living forest frog, grab it backwards and throw its head against the chopping board until it faints, and set aside.

2. Prepare a pot and boil some water. Put the fainted frog in after the water boils. When the frog's skin turns white, take it out immediately and rinse it with cold water for later use.

3. When the oil is hot, add the ginger slices, remove them after the flavor comes out, add the chopped potatoes, fry until fragrant, add the yellow sauce and stir-fry.

4. Stir-fry for a while, add appropriate amount of soy sauce, add enough water, and then put in the blanched frog.

5. After the water boils, turn to low heat, add appropriate amount of salt and light soy sauce, and simmer until the soup is dry. Serve on a plate and sprinkle with chopped green onions.
