The bitter taste in honey comes from the tannins in it, which is similar to the bitterness in bitter melon. They are all natural bitter ingredients that help promote the production of body fluids and help digestion, and are non-toxic. Schefflera honey and Rhizoma Dioscoreae honey are honeys with Chinese medicinal characteristics. They are cool in nature, slightly bitter and astringent, with obvious floral and herbal flavors. These types of honeys have a more obvious bitter taste. In addition, citrus honey and longan honey will also have a bit of bitterness, but the longan has a strong floral fragrance and a mellow taste, which masks the bitterness, so it is not easy to taste.
