When the sterilized honey water is cooled to 26-28℃, add yeast, yeast, koji blocks and other fermentation agents that have been cultured in advance. ④ Fermentation. Ferment the inoculated honey water at 26-28℃ to convert sugar into alcohol. When the alcohol content reaches 6-7ml/100ml (i.e. alcohol content 6-7°), raise the temperature to 35-40℃, add 10% acetic acid bacteria, stir once in the morning and evening every day, and carry out acetic acid fermentation to convert alcohol into acetic acid. When the acetic acid content reaches 5g/100ml or more, the fermentation ends. ⑤ Aging. Add 1% salt to the fermented vinegar and store it for 30 days to increase the flavor of the honey vinegar. ⑥ Filter, sterilize, and package. Add 1% sodium benzoate, appropriate amount of flavor enhancer, sugar color, etc. to the aged honey vinegar, and then sterilize it before packaging and selling. 1. Raw materials: fresh milk, skimmed milk powder, buckwheat honey, agar, gelatin, pectin, edible flavor, streptococcus, lactic acid bacteria. 2. Raw material pretreatment: Honey should be fresh and fragrant and should not contain antibiotics. Fresh milk needs to have its fat content adjusted by adding skimmed milk powder to the fresh milk to adjust its fat content to 2%-4%. Heat the adjusted milk to 71°C for 15 minutes, or at 90-95°C for 3-5 minutes for sterilization. 3. Expansion and cultivation of bacterial strains: First, dilute the freeze-dried bacterial strains (2 parts each of streptococci and lactic acid bacteria, or 2 parts of streptococci and 1 part of lactic acid bacteria) with a small amount of sterile water, revive them at room temperature, inoculate them into 10ml of skim milk, seal them, and culture them at 35-40℃ for 3-4h. After solidification, inoculate them into 50ml of milk-honey solution for culture, and then inoculate them into 250ml of milk-honey solution for culture, expanding them 5 times each time, and so on, until the required amount is reached. 4. Inoculation and fermentation: Add 10% honey, appropriate amount of essence, agar, pectin, etc. to the sterilized milk, and when it is quickly cooled to 40°C, add 2%-3% of the fermentation bacteria, and then seal it and ferment it at 43°C for 5-8 hours. When the pH value reaches 4, the milk coagulates into a semi-solid and can be sold after cooling at 10°C. 3.
