Since salmon are only produced in high-latitude areas and the wild resources are limited, they are farmed on a large scale in many countries. In the market, some people even sell rainbow trout (which grows well in freshwater) as salmon for profit.

Salmon is a migratory fish. It lives and grows in fresh water at the beginning, and enters the ocean at a certain time. When it reaches sexual maturity and needs to reproduce, it swims upstream to return to its birthplace to reproduce, and dies after reproduction. Among them, the freshwater growth characteristics of salmon are artificially utilized, and breeding is mostly carried out in fresh water (this makes breeding technology investment and difficulty higher in the sea). Therefore, the size of commercial salmon produced in this way is not big, and parasite control is difficult to obtain reliable epidemic prevention, which is not suitable for sashimi. Generally, it is cut into sections, sliced ​​meat, and packaged for the market.

There are wild and farmed ones. The wild ones are more expensive, and most of the ones used in popular restaurants now are farmed ones.
