CATDOLL: How to distinguish between shrimp and prawns?

First of all, the term "Jiwei shrimp" does not refer to a specific type of shrimp, but to the shrimp farmed in the Jiwei, which is a type of sea dam in the south. However, since the earliest and most common shrimp farmed in the Jiwei is the Penaeus scabra, it is generally assumed that the Penaeus scabra is the Jiwei shrimp.

But as you can tell from the name, Penaeus razorbackii is also a type of shrimp. In fact, all the shrimps in the order True Shrimp, order Decapoda, order Cladobranchii, superfamily Penaeoidea, and family Penaeidae can be called shrimps. Common ones on the market include Chinese shrimp, whiteleg shrimp, mud shrimp (Penaeus razorbackii), Japanese shrimp, and giant tiger shrimp.

Among them, the first three - Chinese shrimp, whiteleg shrimp and mud shrimp - are easily confused with each other.

It is not difficult to distinguish between the prawns and the other two types of prawns. You only need to look at two parts:

One is the spines on the shrimp's head, formally known as the frontal sword. The frontal sword of Chinese shrimp and whiteleg shrimp has a distinct feature in that it has spines on both the top and bottom sides. However, the frontal sword of the mud shrimp only has spines on the top, which is like a big knife with only one side of the blade. Therefore, the mud shrimp is also called the knife-headed new shrimp. This is how the knife-head came about:

Another thing to look at is the body color. The color of Chinese shrimp is darker, and generally the holes are blue-gray (female) or yellow-gray (male). The body color of white shrimp is lighter, and the shrimp legs are white, so it is also called white-legged shrimp.

The shrimp is different from them. The shrimp legs of the shrimp have a hint of red, so it is also called red-legged shrimp.

If you understand these two points, you can basically distinguish the mud shrimp from other shrimps. As for the pictures you put in your question, the first two are cooked, I can't recognize them (I can't help but smile), and the last one is a black tiger shrimp, also known as the giant tiger shrimp. The body color and size of this shrimp are completely different from mud shrimps. I don't think I will mistake them.
