That is called sand crab, not fiddler crab. One of the claws of fiddler crab is bigger than the body, while sand crab has normal proportion and is small, the largest is like an adult's little finger. This is called sand crab juice, which is used as a dipping sauce for white-cut chicken or stir-fried vegetables. It is very delicious.
