This kind of honey is obtained by the traditional method, also called cooked honey because it is boiled.

1. Honey:

Honey is made in the hive by bees from nectar collected from the flowers of flowering plants.

Bees take nectar or secretions with a water content of about 75% from the flowers of plants and store it in their second stomach. Under the action of multiple transformations in the body, after about 15 days of repeated brewing, various vitamins, minerals and amino acids are enriched to a certain value. At the same time, the polysaccharides in the nectar are converted into monosaccharides such as glucose and fructose that can be directly absorbed by the human body. The water content is less than 23% and stored in the nest hole, which is sealed with beeswax.

Honey is a supersaturated solution of sugar. It will crystallize at low temperatures. The crystals are made of glucose, and the part that does not crystallize is mainly fructose.

2. Bees:

In insect taxonomy, bees belong to the order Hymenoptera, suborder Sphenopoda, tribe Apoidea, superfamily Apoidea, and family Apidae, and are an important group in the order Hymenoptera.

According to fossil data, bees have been found in large numbers in the late Eocene strata of the Tertiary Period. Many species of the Apidae family have great economic value and are closely related to human life.

There are records of bees and their uses in ancient China. Many species of bees have products or behaviors that are closely related to medicine (such as honey, royal jelly, and bee venom), agriculture (such as crop pollination), and industry (such as beeswax and propolis), and they are called resource insects.

The most familiar to people are the Italian honey bees and the Oriental honey bees that are artificially domesticated to make honey.

(1) Honey collection time

When collecting honey, try to avoid the busy time when the worker bees go out to collect honey. It is best to choose before a large number of worker bees fly out to collect honey. When most of the honey cells on the side combs are capped and most of the honey cells on the upper part of the brood combs are also capped, honey can be collected.

(2) Shake honey

The place for shaking honey should be a clean and bright small room. In this way, it can prevent the interference of bee robbers and keep the honey clean. In the peak honey flow period, in order to speed up the shaking process, it is necessary to shake the honey outdoors, and pay strict attention to flies, dirt and other pollutants. After pulling out the honey comb, use a honey cutting knife to cut off the honey cover from bottom to top. Put the cut honey comb into the frame cage of the honey shaker; two honey shakers can put two honey combs at a time, and the weight of the two honey combs should be roughly equal. When shaking honey, shake it slowly at first, then gradually increase the rotation speed evenly, and the rotation at high speed should not exceed 1 minute. Before stopping, gradually reduce the speed to avoid the honey comb from breaking and shaking out larvae. After shaking the first side of the honey comb, pull it out and change the side, then put it into the frame cage and shake the second side. It is best to have three people work together when shaking honey: one person shakes the bees back to the honey comb, one person transports the honey comb and cuts off the honey cover, and one person shakes the honey. This can speed up the honey shaking process. The honey shaken out should be filtered through a double-layer honey filter or iron mesh. After 6 to 7 days, if the broken wax or dead larvae in the honey float on the surface, they should be removed. It is best to use a water tank or a wooden barrel as a container for honey. If a tin barrel is used, it should be lined with a non-toxic plastic bag. The flower species, period, location, etc. should be marked when selling. In the production colony of Chinese bees, the honey storage area and the brooding area are generally not separated. Honey is taken from the honeycombs in the brooding area, and the cells on the honeycombs often contain eggs, larvae, and katydids of bees. In order to reduce the impact on the development of eggs, larvae, and pupae of bees, the honey should be separated immediately from the honeycombs taken out of the brooding area, and the honeycombs should be quickly returned to the original colony after the honey is taken. In the process of taking honey, avoid damaging the surface of the honeycombs and injuring the bees. When separating the honey on the brooding honeycombs, the shaking speed of the honey separator should be appropriately slowed down to prevent the larvae from being thrown out or the larvae from being displaced and causing injury to the brood.
