In our lives, there are countless types of fish and countless ways to cook them. Golden pomfret and silver pomfret differ by only one character in their literal meanings. So what is the difference between the two and why are they called differently?

Let's first clarify the concepts of these two fish. The pomfret we commonly call actually refers to the silver pomfret, also known as the white pomfret, which is a major seafood species in China. The golden pomfret is more of a commodity name, because there are two fish with this name, one is the marine egg-shaped pomfret, and the other is the freshwater white pomfret, a short-capped giant carp, which is a freshwater tropical fish.

Golden pomfret has been cultivated artificially, while silver pomfret is mostly caught in the wild, which is one of the reasons why it is more expensive in the market. But whether it is cultivated or wild, the taste of golden pomfret is completely incomparable to that of silver pomfret. Except for a piece of bone in the middle, silver pomfret has almost no fish bones on its body, and the cooked product is fresh and tender. Golden pomfret is better than silver pomfret, and golden pomfret has a lighter fishy smell.

Silver pomfret is called white pomfret in Guangdong. It is the most common edible fish. Because of its soft meat and few bones, it is especially popular with the elderly and children. Silver pomfret is relatively lazy when living in the sea, which makes its meat not as coarse as that of golden pomfret. Although silver pomfret has a large output, it cannot be farmed at present, so the natural one is of course much more delicious than the farmed one.

In fact, they are almost the same. The price of silver pomfret is more expensive than that of golden pomfret. The reason is that silver pomfret itself is a fish with very "very high-end" requirements for food. It does not pay attention to ordinary food and does not like to eat much, so its growth cycle is relatively long. It is rare to see large silver pomfret weighing more than one kilogram on the market. The production of golden pomfret is large and slow, and it grows fast, generally reaching about one kilogram on the market. However, silver pomfret is caught in the wild, and the production is relatively small. It takes two years to grow to half a kilogram. Therefore, rare things are expensive, and the taste of wild fish is better than that of farmed fish.

The origins of golden pomfret and silver pomfret are different. Silver pomfret is produced in the Yellow Sea, while golden pomfret is produced in the South China Sea. Since silver pomfret is a wild fish, the production is relatively small, and the nutrition of silver pomfret is higher than that of golden pomfret, the price of silver pomfret is much higher than that of golden pomfret.

In terms of appearance, the most obvious difference between golden pomfret and white pomfret is their size: golden pomfret eats a lot and grows fast, and the ones generally seen on the market are around 500 grams; while silver pomfret grows meat very slowly, and it takes two years to grow to half a pound in size. Nowadays, it is rare to see silver pomfret weighing 500 grams on the market.
