1. Boil the turtle meat in boiling water, remove the thin film, chop off the claws, wash and drain, cut into 3 cm long, 2 cm wide pieces, cut the pork belly into 3 cm long, 1 cm wide, 0.2 cm thick slices, cut the winter bamboo shoots into comb-shaped slices, remove the stems of the mushrooms, wash them, cut the large ones, tie the green onions into knots, peel and smash the ginger, and wash the coriander.

2. Place the wok on high heat, add cooked lard, add scallion and ginger and stir-fry until fragrant, then add turtle meat and pork belly and stir-fry, add Shaoxing wine and soy sauce, add cinnamon, star anise, dried red pepper, salt, sugar, and appropriate amount of water and bring to a boil, skim off the foam, pour into the wok, move to low heat and simmer for 1 hour until the turtle meat is soft, then add bamboo shoots, mushrooms, and MSG, sprinkle with pepper, drizzle with sesame oil, serve in a soup bowl, and put the coriander in a small dish and serve at the same time.
