2. Where is cuttlefish produced in China?

There are about 350 species of squid, ranging from 2.5 to 90 cm (1 to 35 inches) in length, with the largest giant squid being over 20 meters long. Squid are distributed in all oceans of the world, mainly living in shallow waters along tropical and temperate coasts, often migrating to deeper waters in winter. There are many species of squid in my country, and the most obvious migratory species are the needleless squid (Sepiella maindroni), which is abundant in the southern coast of Zhejiang and the coast of Fujian; the Taiwan squid (Loligo formosana), which is distributed in the sea area south of the Taiwan Strait, with the offshore waters of Shantou and the Beibu Gulf as spawning sites. Qingdao is also a production area for cuttlefish.

3. What are cuttlefish made of?

There are many ways to cook cuttlefish, and you can cook it without other ingredients. For example, you can cook cuttlefish with sauce by just adding relevant seasonings. The following are some examples:

1. Materials

300 grams of fresh cuttlefish.

Seasoning: 750 grams of oil (about 50 grams consumed), 2 tablespoons of soybean paste, 1 tablespoon of Shaoxing wine, 1/2 tablespoon of sesame oil, 1/4 teaspoon of salt and MSG, a little onion, garlic slices, and minced ginger, and an appropriate amount of starch.

2. Practice

1. Wash and clean the cuttlefish, cut it into 5 cm long and 3 cm wide strips, blanch it in boiling water and curl it, take it out immediately, drain the water, fry it in 80% hot oil, and pour it into a colander.

2. Leave a little oil in the original pot, stir-fry onion, ginger and garlic, add Shaoxing wine, add soybean paste, salt and MSG, stir-fry until fragrant, add soup and bring to a boil, thicken with water starch, add cuttlefish rolls, stir-fry evenly, drizzle with sesame oil, and serve.

4. Why is cuttlefish also called squid?

Cuttlefish is a delicacy that the ocean has given to humans. It is delicious and nutritious. It can be fried, steamed, boiled, or stewed. It can also be pounded into round pieces. The snow-white, delicious cuttlefish balls are the best among fish balls and a good ingredient for cooking soup. It is also called squid, and there is a wonderful legend circulating among the people:

According to legend, after Qin Shi Huang unified China, he visited the seaside during his southern tour one year. He and his followers were mesmerized by the beauty of the Yellow Sea, and one eunuch was so enchanted by the view that he lost a white silk bag containing the "Four Treasures of the Study" and a memorial on the beach.

Over time, the bag was nourished by the sea and the essence of heaven and earth, and turned into a little elf: the bag body turned into snow-white flesh, the two bag straps turned into two wrists, and the ink in the bag was wrapped in the ink sac in the flesh. The elf lived in the sea, appearing and disappearing like a ghost. When encountering a strong enemy, it would bulge its belly and spray out ink to blacken the water, and then take the opportunity to escape. Because the elf sprayed ink and moved as fast as a thief, later generations called it "squid".

Cuttlefish also has medicinal value. It tastes sweet and salty, is neutral in nature, and enters the liver and kidney meridians. It has the functions of nourishing the liver and kidney, replenishing blood vessels, curing metrorrhagia, facilitating pregnancy and childbirth, regulating menstruation, and curing hernia. The Chinese medicine name "Sea Cuttlefish" is its bones, which have the effects of stopping bleeding and astringing.

5. Isn’t cuttlefish called octopus fish?

Cuttlefish is also called squid, cuttlefish, eyefish, etc. The dried one is called Mingyu. It belongs to the cephalopods among the mollusks. Its origin is very wide. It is produced in China, Korea, Japan and the coastal areas of Europe. The largest production is in Zhoushan Islands of my country. Cuttlefish meat, eggs and spine (Chinese medicine name is sea cuttlebone) can all be used as medicine. Li Shizhen called cuttlefish "blood medicine" and it is a good treasure for women with anemia and blood deficiency amenorrhea.

【Properties】Sweet in taste, cold in nature. Enters the spleen and stomach meridians. Can nourish the spleen and replenish qi, and promote diuresis.

【application】

1. Used for spleen deficiency edema, beriberi, and urinary incontinence. It can be used with winter melon and scallion to make soup.

2. Used for those with wind sores, stubborn scabies and scabies that have not been cured for a long time. For example, in the prescription of "Yi Lin Ji Yao", this product is filled with Xanthium sibiricum leaves, added with water and simmered over low heat, and the skin and bones are removed and eaten plainly.

Contains protein, fat, calcium, phosphorus, iron, vitamin B1, B2 and niacin, etc.

In the vast East China Sea, there lives a creature that swims like a fish, but it is not a fish. People usually call it "cuttlefish", "squid" or "mullet". It is one of the famous seafood in my country. In Zhejiang, it is collectively called the "four major economic fishes" along with large yellow croaker, small yellow croaker and hairtail, and is deeply loved by consumers.

Cuttlefish not only tastes fresh and crisp, but also has a high protein content, high nutritional value, and rich medicinal value. Eating dried cuttlefish and dried mung bean stewed in soup has health benefits such as improving eyesight and reducing internal heat; the scientific name of "squid plate" is "squid bone", and it is also a commonly used medicinal material in traditional Chinese medicine, called "sea cucumber". However, the famous "cuttlefish" looks like a fish but is not a fish. It does not have the basic characteristics of fish (such as bones, scales, fins, etc.). Why is it called a "fish"? Which category does it belong to? Let us observe from the perspective of biological taxonomy and we will naturally understand. Our biologists and aquatic experts classify it as shellfish. At this point, people can't help but ask, it doesn't look like the shellfish we usually see? For example, mud clams, razor clams, clams, mussels, abalone, snails, etc., all have single or double shells on the outside. The appearance of these shellfish is very different from it. It should be classified as a "four-legged beast" and cannot be classified.

Cuttlefish is a large carnivorous mollusk. The reason why it is different from ordinary shellfish is due to its evolutionary process. Common shellfish carry heavy shells on their backs, bury themselves in mudflats, crawl on rocks, or attach themselves to fixed objects with their foot threads, waiting to filter tiny floating plants and animals. Their range of activities is very small and their movement speed is very slow. In order to take the initiative to prey on high-nutrition food, cuttlefish need a larger space for activities. Therefore, after a long evolutionary process, their appearance has changed a lot. In order to adapt to swimming, its body gradually becomes oval and flat on the back; its shell degenerates into a small calcareous boat plate, which is wrapped by an increasingly developed mantle to form a body; when it moves quickly, it does not have the swinging function of the tail fin of fish, so it uses the hydraulic principle to eject a stream of water from its mouth to propel its body forward, and its swimming speed can exceed that of ordinary fish in an instant; especially when it encounters enemies, it not only moves in the opposite direction like a rocket, but also releases "smoke bombs" to spray "ink" from its ink sac to create a barrier, confuse the opponent, and then escape; and the "ink" contains toxins that can be used to paralyze enemies and play a strong role in defending against enemies. However, this "ink" needs to be stored for a long time, so the cuttlefish will not easily spray "ink" unless it is in a very critical moment. Usually, when the cuttlefish roams, it generally relies on the fleshy wings on both sides and the head and arms to move forward. It is both a "two-way athlete" and a "reverse sprinter". Isn't it weird?

Because it swims like a fish and has an ink sac in its abdominal cavity, coastal fishermen call it "cuttlefish", which is its common name; and it is classified as a shellfish in taxonomy, which has a scientific basis. The basic structure of shellfish is: the body is soft, unsegmented or pseudo-segmented, usually composed of five parts: head, foot, trunk (visceral sac), mantle, and shell; except for the bivalve, there are jaws and radula in the mouth; the nervous system includes ganglia, nerve cord and a nerve ring around the esophagus; the body cavity retreats to the pericardium. Based on this, cuttlefish is of course a shellfish, it belongs to the phylum Mollusca, class Cephalopoda, order Decapoda, family Sepiidae. It has three genera (Golden Sepia: There are 9 species including Golden Sepia; Needleless Sepia: There is only one species of Needleless Sepia in my country, Zhejiang has the largest production; Metasepia: There is Metasepia Tussui). The "cuttlefish" or "squid" that we Wenzhou people refer to are mostly the "Man's needleless squid" and "golden squid" species that are mainly produced in the East China Sea. These are their "honorable names". The appearance of the two is not much different, the main difference is: the former has an oval body, is slightly thin, has no bone needles, and the dried product is called "moth worm fish"; the latter has bone needles, and the dried product is called "dried squid".
