The most essential parts of crabs are the roe of female crabs and the crab paste of male crabs. The roe refers to the eggs of female crabs, and the crab paste refers to the testes of male crabs. Female crabs mostly lay eggs in autumn, so the eighth month of the lunar calendar is the fattest and most abundant in roe of female crabs; while the ninth month of the lunar calendar is the best time for male crabs to have the most fragrant meat and the most crab paste.
