Bighead carp (Aristichthys mobilis) belongs to the order Cypriniformes, family Cyprinidae, subfamily Hypophthalminae, genus Bighead carp.

Common name: bear fish, silver carp, fathead fish, black carp, yellow croaker, loose fish, bighead fish, bighead carp. English name: Bighead, Bighead crap.

Bighead carp has a flat body and an extremely enlarged head. The mouth is large and terminal, with the lower jaw tilted slightly upward. The gill rakers are dense and leaf-shaped, but not united. There are spiral-shaped supragranial organs in the upper part of the oral and pharyngeal cavity. The eyes are small and located low, without whiskers. The hypopharyngeal teeth are spoon-shaped and smooth. The scales are small, and only the pelvic fins and even the anus have cortical ventral ridges on the ventral surface. The pectoral fins are long, and the ends are far beyond the base of the pelvic fins. The upper half of the body is gray-black, the abdomen is gray-white, and there are many irregular small spots of light yellow and black on both sides.

Bighead carp likes to live in the middle and upper layers of still water. It moves slowly and doesn't like to jump. It feeds mainly on zooplankton and also eats some algae. Sexual maturity is at the age of 4-5 years. Parent fish breed in the river section with rapid currents and whirlpools when the water temperature is 20-27℃ from May to July. Juvenile fish generally grow fat in lakes and affiliated water bodies along the river. When they reach sexual maturity, they breed in the river and then return to the lake where food is abundant to grow fat. In winter, they mostly live in riverbeds and deep rock pits to hibernate.

Distributed in eastern Asia, this fish can be found in all major water systems in my country, but the middle and lower reaches of the Yangtze River are the main production areas.

Bighead carp grows rapidly, with a 3-year-old fish weighing 4-5 kg ​​and a maximum individual weighing 40 kg. It has a high natural yield, is disease-free and easy to raise. It is one of the "four major fishes" in my country's freshwater aquaculture industry and an important economic fish in my country.

Moreover, as the fish grows and develops, the water content gradually decreases, while the protein and fat content gradually increase. The difference in fat content between bighead carp and silver carp is mainly due to different food. Silver carp and bighead carp are both filter-feeding plankton, but silver carp mainly feeds on phytoplankton, while bighead carp mainly feeds on zooplankton. Phytoplankton contains a large amount of carbohydrates, which is the main carbon source for fish to synthesize fat, so the fat and protein content of their muscles are different. Silver carp has a higher fat content than bighead carp, while bighead carp generally has a higher protein content than silver carp. There are 15 types of fatty acids in bighead carp muscle fat, including 8 saturated acids, 3 monoenoic acids, 1 dienoic acid, 2 trienoic acids, and 1 tetraenoic acid, with a carbon chain length between 13 and 20. The percentage of saturated fatty acids in fish is lower than that of unsaturated fatty acids, and the content of saturated fatty acids increases with the growth of the fish body, while the content of unsaturated acids decreases with the growth of the fish body.

The essence of bighead carp lies in its head. Nie Weiping, who is praised as a "top-notch chess player" by the Japanese chess community, loves to eat fish heads and can eat 5 or 6 of them in one meal. This is not only because they are delicious, but also because he believes that fish heads can nourish the brain. Bighead carp meat is sweet and warm in nature, and has the effect of warming the stomach and strengthening the bones and muscles. Fish heads can be used as medicine to treat rheumatic headaches and dizziness in women. Its gallbladder is bitter, cold and toxic. It has a short-term blood pressure lowering effect when injected intravenously; increasing the dose will have a long-lasting effect. Because bighead carp gallbladder is toxic, the effective blood pressure lowering dose is very close to the toxic dose, so it needs to be used with caution in clinical practice. Swallowing fish gallbladder can also cause poisoning, and its symptoms are the same as those of grass carp gallbladder and carp gallbladder.
